Today I'm trying out a new recipe (of course, from Pinterest.... have I mentioned lately just how much I am loving that site??). If you look me up on Pinterest (my name is Julie Schuit), you can see all of the yummy, delicious recipes I have pinned. I almost couldn't contain my excitement when I found a recipe for dip that uses dill pickles. Yum! I'll have to try out that one sometime soon.
But, today's recipe is Crock-Pot Cheesy Chicken and Broccoli over Rice. Three of my favourite ingredients: chicken, broccoli and rice. I am anxious to try it tonight for dinner :) My hubby: might not be as excited as he's not a big fan of rice. But, can't win all the time LOL!
Ingredients:
3-4 boneless, skinless chicken breast
1-10oz. can of cream of chicken soup
1-10oz. can of cheddar soup
1-14oz. can of chicken broth (which I only had the container of chicken broth, so I just used my soup cans to measure the correct amount)
1/2 tsp. salt
1/4 tsp. garlic seasoning (I used garlic salt)
1c. sour cream
6 c. broccoli florets, just fork tender (I cooked in boiling water for about 3-4 mins)
1c. shredded cheddar cheese
Directions:
Place the soups, chicken broth, salt and garlic seasoning into the crock pot and whisk until smooth. Place chicken in, pressing the chicken to the bottom. Cover with lid and cook on low 6hrs or high 3hrs. *Note: I always cook everything on low in the slow cooker, I've actually never cooked anything on high*
When the chicken is cooked, use two forks and shred into bite size pieces. Stir in the sour cream and broccoli.
Serve over steamed rice and sprinkle with cheese.
Makes 4-6 servings.
Sounds delicious, doesn't it? This is my weekly menu for dinners in our house this week:
M- Crock Pot Cheese Chicken and Broccoli served w/ rice
T- Ham, Potatoes, and Veg (I cook my ham covered in tin foil in the slow cooker for 3hrs)
W- Ham & Potato Soup made w/ leftover ham
T- Homemade Shepherds Pie and Salad
F- Nate & I are serving a dinner for the YP's at church, so we get dinner there :)
S- Pizza!
S- Beefy Vegetable Soup (I'll make it on Saturday at some point) and fresh bread
